Select - green olives without stones place in a large pan with carrots, onions, leeks, artichokes, cook in olive oil. Add vegetable stock cub into ingredients and cook in pan cook until soft. Pour into a blender and blend soup until a cream paste. Heat again to thicken, serve adding dressing of garlic, carrots, red peppers, leeks, artichokes, red peppers almonds nuts and fresh breadsticks or toasted bread.

Cretan Lamb Aubergine Filo Pastry Dish

Marinate - lamb in salt, pepper. Coat with thyme, salt, pepper, olive oil, garlic, breadcrumbs, cook in oven. Cut aubergine into strips grill slightly. Sauté croquettes, carrots, leeks, garlic, onions, parsley, olive oil, thyme, rosemary, oregano, goat cheeses fill aborigine rolling up, bake for 10 minutes. Sauté pumpkin, rosemary, thyme, onion, mash with feta cheeses, honey, thyme, add to filo pastry bake for  15 min. Sauce lamb juice honey, vinegar.

Select - smoked Cretan pork cut into strips place on plate. Add to soft goats cheese, pepper, thyme, rosemary, extra virgin olive oil. Mix ingredients all together then roll into a cylinder sharp, place into a fridge to slightly harden. Remove from fridge and cut into small pieces. Select wild green salad wash and roll binding together. Place all on a plate garnish with extra virgin olive oil almonds, and balsamic vinegar.

Add - together rice, onion, thyme, rosemary, in a pan, sauté with white wine tomato paste and fresh tomato slices, cook rice until soft, then stir in Cretan goat cheese. Place wild mushrooms into pan with olive oil and sauté adding aromatic flavours parley, rosemary, and thyme, stirring to blend all the flavours. Place risotto and mushrooms on plate dress with balsamic vinegar, extra virgin olive oil and serve.

Clean - de bone fish place into a pan add olive oil cook lightly each side. Put fish onto a baking tray with olive oil garlic, garnish with wild fennel, onions, salt pepper ammoniac rosemary. Cook potatoes and mash with fresh mint, garlic, saffron. Cut tomatoes and puree into pan with olive oil, salt pepper, thyme, rosemary cook for 1 hours. Cut red pepper and grill both sides, place olive paste onto fish and serve.

Bake - filo pastry bland in tin foil shaping to the serving dish shape, cooking until brown takeout of oven and allow to cool. Cut a fresh orange into pieces and remove outer peel, place oranges in the nest,  add syrup witch is freshly squeezed orange juice and sugar mix in a saucepan heat to thicken, leave to cool. Cut a kiwi fruit into a diamond shape or other fruit and place onto plate pour over the syrup and serve.
